Dough Wines believes that positive change can rise from even the smallest of actions. As the first wine collaboration with the James Beard Foundation, dough contributes an annual “doughnation” which supports their important work across restaurant recovery, equality in the kitchen, and food sustainability.
First Course: Goat cheese fritter with mixed greens, shaved fennel, green olives, citrus vinaigrette
Second Course: Seared scallops with bacon and roasted corn risotto, orange beurre blanc, pea tendrils
Third Course: Mushroom bisque with caramelized oyster, cremini, and shiitake mushroom blend, shallots, Madeira, thyme, scratch vegetable stock, finished with a splash of cream, white truffle oil, herbs
Fourth Course: Red wine braised beef short ribs prepared with certified Angus Beef slow braised with Dough Cabernet Sauvignon, mirepoix, thyme, rosemary, and beef stock until tender, creamy Parmesan polenta, roasted rainbow carrots, savory braising gravy, herbs
Fifth Course: Chocolate lovers s’mores Napoleon prepared with buttery graham cracker crust, dark chocolate fudge, Claude’s chocolate mousse, marshmallow topping, raspberry/strawberry sauce with Combier
